It accepts charges (vibrations or whatever) well and holds them. Virgin Olive Oil is just the first pressing. There is a lot more virgin oil on the market now because the producers are using hydraulic presses that squeeze out more oil on the first pressing than previously. Don't get impressed by virgin olive oil, as it is much a marketing ploy as anything else. This is especially true when there is a price difference of more than 10 cents a gallon. Best Wishes, John M. In the 'old days' the pressure in pressing the oils was about 200 pounds per square inch maximum. With the new hydraulic presses, it's possible that the first pressing will be 2,000 pounds per sq.inch. That gets out about 98% of the oil, and as it's the first pressing it's all virgin or extra virgin. In the 'old days', after the first pressing they would 'rake the cake,' or mix up the pressed cake to prepare it for the next pressing. This would make the second pressing oil come out a bit 'greener', or darker in color. I have no idea what they do now for a second pressing, as the hydraulically pressed cake is as hard as a brick. (It becomes animal feed) You can some times find premium (Meaning very expensive) 'hand pressed oils,' These are not supposed to be hydraulically pressed, but no one guarantees this. I don't think that they are worth the money. Even my friends the gourmet cooks say there's no real difference between them and a regular 'machine pressed' or hydraulically pressed oil.
